I've tried looking but i can't find much at all about rigid boot covers.

To make things worse i have rear stays on my roll bars that angle to the corner of the chassis around my petrol tank.

I would appreciate some pictures for inspiration

The backstays go through vinyl covered wood, and the boot lid itself is hinged on cupboard hinges.

how did you trim round the hole for the stay, or make the join as it were

I had the same problem with the back stays so I made the boot cover in 3 pieces. I made it so that the joins in the three pieces were around the back stays - on the centre piece I made the holes elongated to enable me to slide the section down the angled stays. These are not very visible when it is all in place and I think it looks quite tidy.

My backstays have a plug welded in the bottom and a bolt from them goes through a mounting plate at rear of chassis. This means that my backstays are the same size all the way down, and allowed me to work out where holes went.

Cut holes in wood, and finish trimming then slide up backstays and fit rollbar.

makes sense, next problem is how to finish next to the roll bars, i have two hoops with 100mm x 100mm base plates, just to be harder again the body work sits level with the top of the plates about 10mm higher than where the roll bars bolt too

I`m terrible with pictures, but I placed a few in my archive, named Hasse.

This is a cover of alu/wood.

I have also made some work to "screen off" the dampers and form a "boot floor" on top of the tank.

The pictures are compressed in size, but looks enormous in the archive. Why??
