I think it would be better to hang the chassis. Supporting it from below on a ball bearing will always be unstable with the CG above it...

I also have the Des Hamil book and what he does (IIRC) is only jack up one end at a time so the car is perfectly stable. It just isolates the effects of one end upon the other so that you can avoid one end fighting the other.

Highly recommended book, this guy knows what he is talking about for sure!
